Recipe!

Vegetable Bhaji

8 servings

3-4 Tbsp. oil
3 large onions, finely chopped in a food processor
5-6 cloves garlic, crushed
1 tsp. ground turmeric
1/2 tsp. chili powder
1 tsp. ground cumin
1&1/2 tsp. ground coriander
1&1/2 tsp. salt, or to taste
2-3 Tbsp. sugar
6 oz. can of tomato paste
8 oz. small mushrooms
1 med yam, cut into 3/4 inch cubes
1 large tomato, cut into 3/4 inch cubes
2 carrots, cut into thin slices
handful of green beans, cut into 1/2 inch pieces
1 med eggplant, cut into 3/4 inch cubes
1/2 bunch of fresh cilantro, leaves cut & chopped

-Take the 3 onions, cut into chunks, and add them to a food processor or finely grounded in a blender. Add 1/2 cup of water and the tomato paste to the onions and blend with the onions for 20 seconds more.

-Heat the oil over medium heat and add the garlic until very lightly browned.

-Lower heat and add the pureed onions and tomato paste, turmeric, chili powder, coriander, cumin, and cilantro.

-Stir and fry the spices, adding approximately 1/4 cup of water to prevent the spices from sticking to the bottom of a pan. Continue until you have fried the spices approximately 5 minutes.

-Add the salt and sugar, mix well and add the remaining vegetables. Stir until the ingredients are thoroughly mixed. Sprinkle in approximately 2 Tbsp. water and cover the pan. Simmer for 20 minutes.

-The finished dish should have a small amount of sauce, but it should not be runny. If necessary, take the lid off and cook quickly until the sauce is reasonably thick.

*note: Due to the uneven cooking time needed to soften the yams & carrots, you may need to pre-cook to soften them, so that they will cook evenly with the other vegetables.

Why Not?

So, I was listening to a radio interview the other day regarding Michelle Obama's effort to bring more healthy food choices into public schools. Being questioned was a member of the First Lady's staff, as well as the White House chef. There seemed to be great concern on the part of the interviewer regarding the future of a company, like Cheetos, for instance, if they couldn't make money by profiting from kids. In essence, "How could we do this to them?"

Junk food and fast food companies make an unhealthy product. Why can't we educate people, and give our children healthy, lively food as an alternative? Why do some folks care more about the Coca-cola company's bottom line than they do the well-being of kids (or all people) in this country?

Better food equals less disease. Here are some statistics from N.A.C.H. (National Association of Childrens' Hospitals)...

-According to the Centers for Disease Control and Prevention, 16 percent of children (over 9 million) 6-19 years old are overweight or obese -- a number that has tripled since 1980.
-Overweight adolescents have a 70 percent chance of becoming overweight or obese adults.
-Only Illinois has a statewide requirement for daily physical education (in schools).
-Nearly one-third of U.S. Children aged 4 to 19 eat fast food every day, resulting in approximately six extra pounds per year, per child. Fast food consumption has increased fivefold among children since 1970.
-In case reports limited to the 1990s, Type 2 diabetes accounted for 8 to 45 percent of all new pediatric cases of diabetes, in contrast with fewer than 4 percent before the 1990s.
-In a population-based sample, approximately 60 percent of obese children aged 5 to 10 years had at least one cardiovascular disease risk factor, such as elevated total cholesterol, triglycerides, insulin or blood pressure, and 25 percent had two or more risk factors.

Why can't we tell our children what food is good for them? What is wrong with eliminating unhealthy food choices from school vending machines???

Look; under the law, we don't let kids smoke cigarettes or drink alcohol. These things are bad for kids (and adults). What's so different about food? What is so wrong with keeping our children out of harm's way?

Recipe!

Cumin-Spiced Quick Bread

A perfect bread for autumnal weather, a perfect recipe for busy folks like yourself! Serve warm with Earth Balance, you'll think you've died and gone to a harvest heaven.

(from La Dolce Vegan, Sarah Kramer)

3 cups flour
1/4 cup sugar
2 tbsp baking powder
3 tsp ground cumin
1 tsp cumin seeds
2 tsp salt
egg replacer to equal 2 eggs*
1 & 1/2 cups "milk"
1/3 cup oil

Preheat the oven to 350*F. Lightly oil a 9-inch loaf pan and set aside. In a large bowl, stir together the flour, sugar, baking powder, ground cumin, cumin seeds, and salt. Add the egg replacer, "milk", and oil and gently stir dough until "just mixed." Pour evenly into loaf pan and back fro 50-55 minutes or until a toothpick comes out clean. Let cool on a rack for 10-15 minutes before removing from pan. Makes 1 loaf.


*NOTE- Silken tofu is a great egg replacer! 1/4 cup blended tofu = 1 egg. Also, "Ener-G Egg Replacer" (powdered) can be found in most health food stores. Bananas are better for sweeter recipes...

Hold the Onions!

Today's email from Yoga Journal's "Eating Wisely" columnist reminded me of how tough it can be to eat vegetarian... when there are vegetables that you HATE. I know, I know-HATE is a strong word, and I rarely use it. When it comes to onions, however, I can't emphasize it enough! Luckily for me, onions are easy to omit when you are cooking at home. And when it comes to eating out, well, a simple request to the kitchen usually does the trick.

On the other hand, I also really dislike mushrooms! Today's offering from YJ's column included two mushrooms recipes... which is no big deal, I get to skip over them. However, many people assume that because you're not eating a "regular" burger at the restaurant or barbecue, that a portobello mushroom burger is EXACTLY what you've been waiting for! Uh, wrong! Anyway, just like anything else, I have gotten used to finding something else, or being okay with a garden salad until I get home.

What if what you hate though, is tofu? Or broccoli? Or peanuts? An ingredient, that to me, would seem hard to replace, whether for taste or nutrient's-sake? Have you found a suitable stand-in? Or are you still looking? Share your stories of dislike, and maybe we can all brainstorm together...

Snack Recipe!

Brown Sugar Cinnamon Popcorn

(from the pages of Vegetarian Times, Oct. '09)

"Skip the chips! This crunchy treat will satisfy kids' snack urges and still leave room for cake and ice cream."

6 cups air-popped popcorn or plain, unsalted microwave popcorn
1/4 cup vegan margarine, melted (EARTH BALANCE!)
1/4 cup brown sugar
3/4 tsp. ground cinnamon

Toss popcorn with melted margarine. Sprinkle with brown sugar and cinnamon, and toss to coat.

A sweet, light treat for everyone to ENJOY!

Wisdom from the Birthday Girl...

Today is my dear friend Aminda's birthday. Aminda is newly vegan, and a beautiful example of the freedom and joy a vegan diet can bring about (fyi, she was fabulous and joyful even before this).

In a Facebook discussion of a video I posted on my page concerning Eli Lilly and the production of BGH (Bovine Growth Hormone, or rBST), Aminda shared a wonderful sentiment about seeing things from a new perspective; that of a mama cow in a dairy farm...

"...I had a moment today where ice cream sounded really good...and I swear to you I choked up - here's what went through my head...imagine a mother...she has a baby and that baby is immediately taken from her, she longs for her child but the only thing she has left is the milk in her breast...someone takes that milk forceably from her. and then she is given hormones wherein she must continually give her mother's milk against her will....never to nurture her child and possible never to have another one. All the while getting sicker and weaker...
Stopping rBGH is the only logical, reasonable, human thing to do."

The thought is devastating, isn't it? I invite you to remember this the next time you reach for a glass of milk...

High IQ Children Become Vegetarian Adults...

For Real? Well, I've always assumed it to be true (tee hee), but now we have scientific proof. According to a British study, "having a high IQ as a child is significantly linked to being a vegetarian as an adult."

So what came first; (forgive the expression) the chicken or the egg? We could deduce that a diet rich in fruits and vegetables will certainly boost brain power. OR, could it be that intelligent people are more likely to consider animal welfare and health issues when it comes to diet?

Famous veg*ns include Albert Einstein, Leonardo da Vinci, Ben Franklin, Paul McCartney, and George Bernard Shaw. (see July posts for more complete lists)

Vegan Perks

There are so many things I love about being vegan. Really. Knowing that I am making a difference in my own little (or not so little?) way makes me feel more connected to every living thing around me. Maybe a tad selfish, but it's a cool feeling, what can I say?

Yesterday I was able to benefit from my veganism in another way. I went to Whole Foods after my last class to purchase soy milk, soy "creamer", and Vegan Oregon Chai. After 3 classes taught, all by 2pm, I admit I was tired and distracted by the time I arrived home. I realized about 3-4 hours later, that I never brought in my groceries-I left my items in the back seat of my car! *whoops*

I would like to say I've never done this before, but that would be a big fat vegan-lie... I can say, though-that when you don't drink cow's milk, you don't have to worry about it going bad!!! I just got out to my car, brought my stuff in and threw it in the fridge, without a concern about this stuff killing me later on. This also comes in handy when dealing with leftovers. There is no special temperature that you need to keep vegetables before packing up and storing. Just throw it in the fridge! easy-peasy.

Now, I can't say that vegan food doesn't go bad, or that you CAN'T get sick from it... but I think I can safely say your chances are a LOT smaller when you don't eat animal protein. Vegan=1. Omnivore=0.

Recipe!


I had the BEST lunch yesterday... it was just a "throw-together" kind of meal, and I'm so happy how it turned out! This should make enough for 2 people.

Red Pepper & Basil Pasta

2 C cooked short pasta (I used Brown Rice Penne Pasta from Trader Joe's)
1 med. Red Bell Pepper-chopped
2 Tbs. Garlic-minced
1/2 C marinara sauce (I prefer "tomato & basil" from TJ's)
1 Tbs. Olive Oil
1/3 C loosley packed, fresh Basil-chopped (garnish)
sea salt (to taste)

Cook pasta, drain, set aside. Saute garlic & olive oil over MEDIUM heat (both will burn!) for a minute or so and then add the pepper. Saute for another 2 minutes then add the pasta back to the mixture; turn heat to low. Stir, add a touch more olive oil if the pasta is sticking. Add marinara; just enough to cover pasta mixture completely. The sauce should heat up rather quickly. Serve up and garnish with the chopped basil & sea salt.

Veg*n at the movies...

Zombieland

I had a great time at the movies today, thanks to Woody Harrelson (vegan!) and his crew of ass-kicking zombie-killers. The movie was gross and hilarious and super-fun. I'm not big on too much gore, but this was totally bearable.

My favorite part of the film was early on when "Columbus" (Jesse Eisenberg) explained how the U.S. became "Zombieland". Apparently, someone ate a bad burger (as if all burgers weren't bad... lol). Mad Cow disease quickly evolved into Mad Human disease, the "mad humans" ripened into ZOMBIES. Argh! That's a pretty damn good excuse to go veg*n, in my book.

This reminds me of my 2nd favorite quote from John Robbins (author of Food Revolution and Diet for a New America)...
"You don't hear anybody talk about mad-tofu disease."

Anyway, go see this movie. Go laugh, and have some fun (don't forget rule #32, Enjoy The Little Things).

October 1st is the kickoff of Vegetarian Awareness Month. What can you do to celebrate? Have you tried going veg*n for a day? A week? A month? Maybe now is the time commit yourself to a "test-run"!

Already veg*n? Why not help spread the word by providing a positive example of the veg*n lifestyle. Instead of talking about what you're missing out on, tell those around you about what wonderful options you have! Take someone out to a veg*n restaurant, or cook your loved ones a meat-free meal... show them how tasty and filling our food choices really are.

Help de-bunk these myths about veg*nism being a "deprivation" diet. Have fun, be well, and help change the world!

Vegan on Vacation

It's been a hectic few days here at the Brooks-house... so I apologize for my absence.

And now, I'm getting ready to leave on my first real vacation in over 2 years! I'm so excited to get back to Seattle, the city where I became vegan. There are so many great restaurant options in the Seattle area; The Teapot Vegetarian House, Than Brothers' Vietnamese, and Cafe Flora... to name a few.

So how do we travel to a new city as veg*ns? I always start by visiting the Happy Cow website (see link below) to see their restaurant guide. If that doesn't work out, there's always Subway! I'm only half-kidding... Although not exactly "fine-dining", Subway is a wonderful option for fresh vegetables!

Not only do I try to check out restaurants ahead of time, but if I'm staying with friends or a place with a kitchen, a quick grocery run as soon as I get into town is a must on my list (don't forget soy creamer for your coffee and Earth Balance "butter spread")!

One last thing... for your travels. If you're driving, taking a cooler along with fresh fruit and veggies is a nice choice. If you're flying, stock up on granola bars, trail mix, and/or dried fruit. Just remember-always give yourself a few options so you don't get stuck hungry in a strange place!

"Riblets" are Back!

About a year ago, I found a Gardenburger product called "BBQ Riblets" and was SO happy to find a faux meat that reminded of some midwest home cookin'! I could find them at Safeway and Trader Joe's... and then, the worst happened; they disappeared!

I have spent months trying to find a suitable replacement, and had no success! Then, at Safeway last week, I found Morningstar Farms-brand "BBQ Riblets". YAY! I picked them up right away, and they seem to be the exact same thing. I don't know what happened, but they're back. Again, with the YAY!

So give these a try for yourself, or with an omnivore who needs a nice example of vegan substitutions. :-) Add sweet corn and a cucumber salad, and you've got quite a dinner!

A Great Find

Today I wanted to share with you my favorite store-bought bread.

I do most of my grocery shopping at Sunflower Market and Trader Joe's. No matter where I shop, though, I need to be an expert label reader... and a loaf of bread is certainly no exception! A lot of bread contains milk, whey (milk product), and/or honey.

My favorite vegan bread actually comes from Safeway! It's labeled "Seven Grain Deli Style Sliced Bread", it only costs $2.69, and if you can find it fresh out of the bakery (?)... it's gonna be a GOOD day.

The Loving Hut

Did you know there is a GREAT new vegan restaurant in town? The Loving Hut, located at 35th Avenue and Union Hills (on 35th, SW corner of intersection). How nice to NOT have to drive to Scottsdale or Tempe for quality vegan fare!

Their entire menu is totally vegan, and they even offer great drinks and desserts. :-) Stop by when you can, they are open every day (11-3 for lunch, and 5-9 for dinner) and bring a friend!

Easy Stir Fry...

Fresh Red Bell Pepper
Canned Pineapple
Frozen Broccoli

...and that's it! This is a favorite flavor combination of mine. Just throw in a frying pan with a small amount of oil and Bragg's (or soy sauce); broccoli first-so you don't overcook the pepper. Serve over brown rice and garnish with garlic gomashio.

Quick, Yummy, and Quick. And who doesn't like quick?

Recipe!

Punk Rock Gravy

I admit it; I have Autumn Fever! While I refuse to complain about something I cannot change (Arizona summer), I have found myself hallucinating about cooler weather as of late. I blame this ailment for my recent visions of comfort food. I thought it best to air the malady and share my daydreams of Thanksgiving grandeur.

"Veg*n Thanksgiving?" you ask.

"YES!" I reply. Nearly three years ago I created my first vegan Thanksgiving feast... a great success, if I do say so myself. What do I think was the secret? Punk Rock Gravy!!!


1/4 cup all-purpose flour
approx. 2 & 1/2 cups water
1 Tbsp. olive oil
1 med. onion, quartered and thinly sliced
2 tsp. mustard seeds
3 cloves garlic, minced
2 cups cooked chickpeas, drained, OR 1 (16oz) can, drained & rinsed
2 pinches ground cumin
2 pinches paprika
pinch dried rosemary
pinch dried thyme
pinch dried oregano
pinch ground coriander
3 Tbsp. soy sauce
juice of 1 lemon
1/4 cup nutritional yeast

Mix the flour with 2 cups of water until the flour is mostly dissolved.

Heat a large skillet (preferably cast iron) over medium heat. Add the olive oil and let heat for 20 seconds or so. Add the onions and mustard seeds; cook for about 10 minutes, stirring occasionally, until the onions are browned and the mustard seeds are toasted. Add the garlic and saute for 2 minutes more. Add the chickpeas; use a potato masher to mash them--you don't want to mash them into a paste, just make sure each one is broken up although if there are a few whole ones left that is okay. Add the herbs and spices, soy sauce, and lemon juice. Scrape the bottom of the pan to loosen any browned bits of onion.

Lower heat and pour the flour mixture into the pan. Stir constantly until a thick gravy forms. Stir in the nutritional yeast. If it looks too thick and pasty, add more water and mix well. It may look like it doesn't want any more water added to it, but just keep mixing and it will loosen up.

Keep warm until ready to serve. Makes about 3 cups. And most importantly, don't wait until November to make this!!!

ps. soy milk makes GREAT mashed potatoes. :-)

Beer & Fries...

...are vegan, so why do I feel so crappy today?

Well, friends; let's clarify. If you've made the veg*n switch, you have undoubtedly made a transition toward a healthier diet. However, just because something is vegan, doesn't mean it's good for you. Or, in my case, there CAN be too much of a good thing.

Last night I went out for a beer with a friend after my last class. When it became obvious that we need to properly catch up, we knew that calories must be added to the mix! I think the Sweet Potato Fries were my only option on the menu, so we got a giant plate.

90 minutes and a LOT of sweet potato fries later (and only 1 Corona, btw), I went home with no desire to eat the remainder of my lentil soup. I was certainly full, but not necessarily fulfilled...

This morning I woke up and just felt AWFUL. I thought, "Can this be a hangover? Certainly not, after having only one..." But could it be the combination of a beer with only greasy fries and a touch of ketchup? My guess is YES. Grr.

One of the BEST (and most obvious) things about a vegan diet is how quickly the body rids itself of toxins, and how it just keeps wanting the good stuff! It tells me when I'm not eating enough vegetables or drinking enough water. And it reminds me to take care of myself when I stop paying attention.

Oh, the healthy body. What a good friend to have!

Rustic Tomato Lentil Soup

I love this soup! It's super-easy, just get the lentils cooking first, so you don't have to wait when the rest of the soup is ready. This is a big batch, and it's hearty-so you can make it for your friends... I think it will be especially good for Sunday afternoon football, come winter... Da Bears! But if you keep it all for yourself, don't worry-it's even better the next day!

And now, from the pages of -How It All Vegan- (Barnard, Kramer)...

as much garlic as you can stand, minced
1 medium onion, diced
3 medium carrots, diced
2 Tbsp olive oil
2 stalks celery, chopped
6 cups vegetable stock
1-28 oz can diced tomatoes, including juice
2 cups cooked lentils
1 cup dry pasta (any short kind)
cayenne pepper (to taste)

In a large soup pot, saute garlic, onions, and carrots in oil on medium-high heat until the onions are translucent. Add the celery, stock, tomatoes, lentils, and cayenne and bring to a boil. Reduce heat to low and simmer for 20 minutes or until carrots are tender. Add pasta and simmer for 10 more minutes before serving. Makes 4-6 servings.

*Please note*
You can use 2 cups canned lentils instead of cooking them yourself. Also, you can replace the canned tomatoes with fresh (5-8, diced, with 1/4 C water). As for the garlic? When I made this last night I started out with 3 Tablespoons of minced, and could have used even more! Then again, I really like the garlic...

Go See "Food, Inc."

Take a friend, take a family member. Take someone that eats fast food, take someone that just eats without thinking about it. Go watch this film. It was thoughtful, scary, and even hopeful.

"Food, Inc." didn't discuss vegetarianism as a healthy alternative to the dangers (outbreaks!) associated with factory farming (in fact, I don't remember hearing the word 'vegetarian' ONCE)... but it did bring under a bright light what many people would rather keep in the dark.

The movie began with the author of "Fast Food Nation", Eric Schlosser, eating a hamburger and fries at a diner, saying how this is STILL his favorite meal... ugh. Well, at that point I realized this piece would not be about getting people to NOT eat meat. This is okay, though-because it was about people making an informed choice about the food they take in to their bodies. Most people don't know, or don't care, about what it takes to get "their" food on their plates.

I really hope this helps in changing things...

being vegan at the movies...

Today I saw "Julie and Julia", with Amy Adams and Meryl Streep. Both gave lovely performances; it was a very sweet, and touching movie overall. I give it 9 of 13 stars, if anyone is interested...

I noticed, however, my (literally) physical reaction the first time in the movie they showed the character Julie preparing a whole chicken for dinner. It occurred to me there was going to be a LOT of meat eaters in this film, and I had to tell myself to let it go and focus on the story. It was hard, admittedly, especially when they were eating chicken and duck and working with the whole bird. I kept thinking to myself, "How can these people not see this creature for what it is (was)? How can directions from a cookbook that read, 'feel the knife scraping the bone' not freak someone out?"

And the scene where Julie must prepare lobster? Holy crap. In the beginning of the scene, she's (understandably) appalled at the idea of steaming the crustaceans alive... but she can't bring herself to sticking a knife in their heads, so she ends up throwing all three in a pot of boiling water. She can't even watch herself toss these creatures to their death, but she does it, millions do. For the sake of taste.

Don't misunderstand, I watch people eat meat all the time. And I realize this movie was ABOUT cooking (French cooking, specifically), but it got me thinking about what we see in the media about vegetarianism.

Who are the vegetarians we know best from TV? The two that come to mind first for me is "Phoebe" from Friends, and "Lisa" from Six Feet Under. Phoebe was the lovable ditz; the new-age, hippie massage therapist that only occasionally mentioned her vegetarianism, until the season she had the triplets, and decided they "wanted" meat. Oh, NBC... you almost had it. Next up? Lisa was actually an intelligent character; a vegan chef. She was also pegged as "new-agey", but Lili Taylor played Lisa in a way that you felt she had made an informed decision about animial cruelty and her own health... Until, of course-she got pregnant. I remember watching the episode that she was eating meat "protein for the baby", and almost fell over from the disappointment (HBO... I love Six Feet Under-this was my only complaint; but a BIG one).

***Don't even get me started veganism and pregnancy. Of COURSE you can have a healthy pregnancy without animal products... hmm. Just had an idea for another post, but another day.***

Am I leaving out any famous Veg*n characters? Any others you can think of? Any veg*ns that aren't depicted as flakey? I'd love to hear your comments on this.

I look forward to the day that the entertainment industry can depict vegetarianism not as a character quirk, but instead as something to be admired... or even, as something NORMAL. Vegans are some of the strongest, most determined, and mindful people I know. I say we show the world!

Recipe!

BANANA PANCAKES!

-makes 2 or more servings-courtesy of How It All Vegan (Barnard/Kramer)-

On mornings that I find myself with a little more time, having guests for brunch, or just need something warm in my belly... this simple recipe always hits the spot. Sometimes I add blueberries to the batter, too. yyyyum.

1 C flour
2 tsp baking powder
1 ripe banana, mashed
1 & 1/4 C soy milk
1 Tbsp sweetener (I like raw cane sugar)
sliced fresh fruit (garnish)

In a large bowl, sift the flour and baking powder together. In a small bowl, mash the banana with a fork and add 1/4 cup of the "milk", mixing together until there are no lumps. Add the banana, sweetener, and remaining "milk" to the dry mix and stir together until JUST mixed. Portion our about 3/4-1 cup of batter onto a hot, non-stick pan or a lightly oiled frying pan and cover with a lid. Let sit on medium heat until the center starts to bubble and become sturdy. Flip pancake over and cook other side until golden brown. Repeat process until all the batter is gone. Garnish with fresh fruit and maple syrup.

Let's not kid ourselves.

There is NO SUCH THING as "compassionate killing" when it comes to eating meat.

While I will agree that there are more humane ways to treat animals when it comes to the industry, I cannot concede that any meat-eating is less than objectifying. If one was compassionate towards another living creature, they would do what they could to alleviate it's suffering.

Let's call a spade a spade. If you're "compassionate" toward animals, you don't eat meat.

Hi all-

Just wanted to apologize for my brevity as of late. My brand new HP notebook died, and have only had short bursts of time available online. That, combined with my personal drama over the last 3 weeks... my blog has not been as in-depth as I would have preferred. :-(

Unfortunate...

I decided to try strawberry-flavored tofu in my smoothie this morning. It was NOT good. It tastes VERY sweet, and adds a boost of flavor, that's for sure. If it sounds good to you, go for it! But again, not for me.

Tofu Tips

Not sure how to make your new protein source more enjoyable??? Taking a little extra time with with your tofu will make all the difference!

First, make sure you have the right type. I usually stick with Silken (really soft) or Extra Firm (self-explanatory). Silken, or soft, tofu works best for smoothies; stick with Extra Firm for a stir-fry or a scramble!

When it comes to creating a meaty texture, start with draining all the water from the cube of tofu. Don't just let the water out... take a few minutes to press the tofu by putting it in a strainer and setting plates on top to add wait and squeeze out additional water. To take this a step further, freezing tofu will really make it chewier. Just thaw and cook as you choose!

When making a stir-fry, I start the tofu 15 minutes before the vegetables. In a bit of oil, you can fry cubed tofu until golden brown on one side and then flip it. Be sure not to get it too hot... the slower the tofu fries, the chewier the consistency will be. Your call!

Another one of my favorites is a tofu scramble. Completely crumbling drained (extra firm) tofu will be JUST like scrambled eggs. Just fry up in a bit of oil, add garlic and veggies; you've got brunch!

New Product...

...or at least "new to me". I found this at Whole Foods last night, and almost did a little dance right there in the aisle. I've missed my chai tea lattes @ Starbuck's, and now I can just make them at home, with Oregon Chai's VEGAN version!!! Just like the original, minus the honey, of course. Mix it with soy milk, vanilla for me-and heat or serve iced. De-lish.

Recipe!

Roasted Red Pepper Soup

I made this soup for the first time tonight, and it makes a BIG batch! Turned out really great and flavorful, though... perfect for when you have lots of peppers and basil from the garden.

Ingredients:
10-12 medium red bell peppers, halved (seeds removed)
3 Tbsp olive oil
1 medium yellow onion, peeled and finely chopped
1 large carrot, peeled and diced
2 large cloves garlic, peeled and crushed
1 medium yukon gold or sweet potato, peeled and diced
2 tsp chopped fresh thyme
1 Tbsp chopped fresh basil
4 Cups veggie broth
2 bay leaves
2 tsp red wine vinegar
1/8 tsp cayenne pepper
sea salt to taste
1 basil leaf (garnish)

1. Preheat broiler. Place red peppers cut side down on baking sheet(s). Lightly coat the outside of each pepper with olive oil. Place baking sheet under the broiler and cook until the skins blacken. Remove from broiler and place all peppers in a large bowl immediately. Cover tightly with plastic wrap... this helps the peppers sweat, which loosens the skins. Wait until the peppers are cool enough to handle and gently remove the skin from each. Put skinned peppers in a bowl and set aside.

2. In a stock pot, heat 1 Tbsp. oil over medium heat. Add the onion and carrot and cook until the onion is soft and translucent. Add the garlic and saute briefly. Add potato, herbs (it's gonna be smelling SOOO good right about now!), veggie broth, roasted peppers, and bay leaves. Simmer until all vegetables are soft. When ready, remove the bay leaves and puree the soup until smooth. Return to stock pot, add vinegar and cayenne pepper. Season with sea salt, garnish with fresh basil leaf and serve immediately!

For Her

Good Morning, lovely reader.

I wanted to take a moment to explain my 24-hour absence. Yesterday I had to say goodbye to my companion and best girl, Belle. Belle was a black lab-mix that has been along my side since she was 5 months old. She was a perfect pup that alway kept watch over me; sleeping at the foot of the bed. She loved taking road trips, and didn't even mind when I sang too loud to the radio.

We discovered Belle's cancer four months ago, and put her through two surgeries since. The tumors continued to grow, and things took a turn for the worse nine days ago. I finally had to make the decision to end her pain.

Seeing her suffer was one of the hardest things I've had to do. While I won't go into the details of her symptoms, I CAN tell you how it has affected me in terms of my veganism (since this seems to be the appropriate venue). I know that seeing her in any capacity other than her happy, tail-wagging self has just confirmed that I never want to see that kind of misery again. In addition, I don't ever want any animal to suffer at my hand (or by my request, or for my "taste") EVER AGAIN.

People who don't believe that animals can understand pain, physical or emotional, are simply shutting their eyes to what's right in front of them. Ignorance is NOT bliss, it's just ignorance.

Jen's Pesto

Today I was lucky enough to be given a crazy-big batch of fresh basil from a student (thanks, Suzanne!). NOW, I get to make pesto... and so do you!

This recipe originally comes from -The Mediterranean Vegan Kitchen-, by Donna Klein. After trying out some variations in the kitchen of an old friend, I (we) decided this was the favorite version. Makes 1 Cup... Hope you like it!

3 Cups loosely packed fresh basil leaves
6 Tbs. pistachio nuts, unsalted
2-4 large cloves garlic
3/4 tsp. sea salt, or to taste
6 Tbs. fruity extra-virgin olive oil

Combine the basil, pistachios, garlic, and salt in a food processor fitted with a metal blade or a blender. Process or blend until the ingredients are finely chopped, scraping down the sides of the work bowl as necessary. Add the oil and process until smooth and creamy. If not using immediately, store tightly covered in the refrigerator for up to 2 days, or place in ice cube trays, cover tightly with plastic wrap, and store in the freezer no longer than one month for the best flavor.

Goes well with gnocchi, pasta, as well as fresh veggies!

a must-have...

...for any veg*n library? -Food Revolution-, by John Robbins.

As far as I'm concerned, this is the VEGAN BIBLE. Robbins discusses the dangers to our health from consuming meat and dairy products, along with fad diets and genetically modified organisms (GMO's). We also learn about the environmental repercussions of these industries and their mass "food production", and what REALLY happens to the kind, sentient creatures that end up on our plates.

Robbins speaks to all of these issues with great authority; backed up by numerous objective, scientific references. -Food Revolution- was published in 2001, a follow up to Robbins' 1987 phenomenon, -Diet for a New America- (the book that brought me to veganism and changed my life for the better).

Please read this book.

a must-have...

...for any veg*n kitchen? A blender!
and a should-have (if at all possible) for any veg*n kitchen? A food processor! Helps in making your own hummus & salsa...

What did the Vegan eat today?

Breakfast:
-coffee! (with my Silk brand soy creamer-french vanilla, and raw sugar)
-smoothie

Lunch:
-rotini pasta with sauteed zucchinni & red bell pepper, tossed in olive oil & garlic gomashio
-slice of whole wheat bread with almond butter

Snack:
-Odwalla bar ('Berries Go-mega'-yum)

Dinner:
-brown rice and steamed broccoli with Braggs & garlic
-red grapes
-chocolate soy milk

Have a smoothie!

I do, every morning. This is my breakfast smoothie formula... I have perfected it (for my own tastebuds, of course!), feel free to modify with different frozen fruits/berries and juices to suit your taste!

makes approx. 18 oz-vegan-5 minutes

1 banana
4 oz. silken tofu (1/4 container) *protein source*
1 Tbs. ground flaxseed *Omega-3's*
3/4 Cup orange-pineapple-banana juice
4 oz. frozen mixed berries
(I like the blueberry/blackberry/raspberry/strawberry blend from Trader Joes)

Just throw it in the blender and GO! This is a full meal in a glass. You can experiment with the amount of juice you add to accomodate preferred thickness, but make sure you get SOFT or SILKEN tofu... this will give it a nice smooth consistency.

Recipe!

Zucchini Sauteed with Pine Nuts, Capers, and Raisins

serves 4-vegan-30 minutes or less-gluten free

I like to try at least one new recipe every week; to introduce new ingredients and, especially, to keep myself from getting stuck in a kitchen/recipe/cooking rut. This was tonight's dish!

"Have all your ingredients prepped and ready to go before you turn on the skillet--the dish cooks very quickly because the zucchini are sliced so small.

2 medium zucchini (1 lb.)
2 Tbs. olive oil, divided
2 Tbs. pine nuts
2 garlic cloves, minced (2 tsp.)
2 Tbs. balsamic vinegar
2 Tbs. raisins
1 Tbs. capers, drained

1. Cut each zucchini crosswise into 3-2 & 1/2 inch-long cylinders. Strand each cylinder upright, then shave 1/8-inch-thick strips away from seedy core. Discard core. Cut zucchini strips into matchsticks. (should be about 3 cups)

2. Heat 1 Tbs. oil in medium skillet over medium heat. Add zucchini, and season with salt, if desired. Saute 2 minutes, or until zucchini are tender. Transfer to plate.

3. Heat remaining 1 Tbs. oil in skillet over medium heat. Add pine nuts and garlic. Saute 1 minute, or just until mixture is straw colored. Stir in vinegar, raisins, and capers. Cook 30 seconds, then return zucchini to skillet and stir to heat through. Season with salt and pepper, if desired."

Again, this was dinner for me tonight. The recipe says it serves 4, but I nearly made a meal of it all by itself! I had at least 2/3 of the dish, along with a slice of whole wheat bread with some Earth Balance (the BEST butter substitute E-V-E-R), and a glass of Silk brand chocolate soymilk... A yummy nummy meal. :)
